Apricot Upside-Down Cake

Here is the last of the father's day recipes. Porter wanted to make dad an apricot cake (remember we had an over abundance of apricots) so I found this recipe for apricot upside-down cake. I think I followed it pretty much exactly. It turned out deliciously moist. How could it not, with all that butter.

This might be fun to try in a dutch oven while camping. I wonder if it would work.

I want to know how your apricot leather turned out with sugar free jello. That could be a serious keeper.

The cake looks fantastic, as always.

the apricot leather with sugar-free jell-o was great. the kids liked it much better than the stuff i made earlier with just corn syrup. i couldn't taste any strawberry and it stayed true to the apricot color, but the stuff added just the right amount of sweetness. i'd still like to find a good recipe without any added sugar or artificial sweetener, though.
